Ingredients:
- 3 lbs Garnet or Jewel Yams, peeled and sliced into 1-inch rounds
- 2 tbsp Unsalted butter, melted
- 0.5 tsp Ground cinnamon
- 115g Dark brown sugar, packed
- 60ml Fresh orange juice
- 55g Unsalted butter, cubed
- 1 tsp Vanilla extract
- 0.5 tsp Sea salt
- 0.25 tsp Ground nutmeg
- 150g Mini marshmallows
Instructions:
- Preheat your oven to 350°F (180°C). Peel the 3 lbs of yams and slice them into 1 inch thick rounds. In a large bowl, toss the sliced yams with 2 tbsp of melted butter and 0.5 tsp of cinnamon. Arrange the yams in your baking dish, overlapping them slightly like shingles.
- In a separate small bowl, whisk together the 115g dark brown sugar, 60ml orange juice, 1 tsp vanilla, 0.5 tsp sea salt, and 0.25 tsp nutmeg. Pour this mixture evenly over the yams in the dish. Scatter the 55g of cubed butter over the top.
- Cover the dish tightly with foil and bake for 30 minutes. Check for a fork tender center in the thickest yam slice. Remove the foil and bake for another 10 minutes until the syrup is bubbling and thick.
- Spread the 150g of mini marshmallows over the top in an even layer. Bake for 5 minutes until the marshmallows are puffed and golden brown.
