Ingredients:

  • 3 lbs Garnet or Jewel Yams, peeled and sliced into 1-inch rounds
  • 2 tbsp Unsalted butter, melted
  • 0.5 tsp Ground cinnamon
  • 115g Dark brown sugar, packed
  • 60ml Fresh orange juice
  • 55g Unsalted butter, cubed
  • 1 tsp Vanilla extract
  • 0.5 tsp Sea salt
  • 0.25 tsp Ground nutmeg
  • 150g Mini marshmallows

Instructions:

  1. Preheat your oven to 350°F (180°C). Peel the 3 lbs of yams and slice them into 1 inch thick rounds. In a large bowl, toss the sliced yams with 2 tbsp of melted butter and 0.5 tsp of cinnamon. Arrange the yams in your baking dish, overlapping them slightly like shingles.
  2. In a separate small bowl, whisk together the 115g dark brown sugar, 60ml orange juice, 1 tsp vanilla, 0.5 tsp sea salt, and 0.25 tsp nutmeg. Pour this mixture evenly over the yams in the dish. Scatter the 55g of cubed butter over the top.
  3. Cover the dish tightly with foil and bake for 30 minutes. Check for a fork tender center in the thickest yam slice. Remove the foil and bake for another 10 minutes until the syrup is bubbling and thick.
  4. Spread the 150g of mini marshmallows over the top in an even layer. Bake for 5 minutes until the marshmallows are puffed and golden brown.
