Ingredients:
- 3 medium overripe bananas (approx. 1.5 cups mashed)
- 0.5 cup unsalted butter, melted and cooled
- 0.25 cup sour cream
- 2 large eggs, room temperature
- 1.5 tsp vanilla extract
- 0.75 cup brown sugar, packed
- 0.25 cup granulated white sugar
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 0.5 tsp fine sea salt
- 0.5 tsp ground cinnamon
- 0.5 cup semi-sweet chocolate chips (optional)
- 0.5 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with a parchment paper sling for easy removal.
- In a large mixing bowl, mash the overripe bananas until mostly smooth with only a few small lumps remaining.
- Whisk the melted butter into the mashed bananas. Add the brown sugar and granulated white sugar, whisking until the mixture looks glossy and cohesive.
- Whisk in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the sour cream and vanilla extract to complete the emulsion.
- Gently fold in the flour, baking soda, salt, and cinnamon using a spatula until just combined. If using chocolate chips or nuts, fold them in now. Do not overmix.
- Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
