Ingredients:

  • 3 medium overripe bananas (approx. 1.5 cups mashed)
  • 0.5 cup unsalted butter, melted and cooled
  • 0.25 cup sour cream
  • 2 large eggs, room temperature
  • 1.5 tsp vanilla extract
  • 0.75 cup brown sugar, packed
  • 0.25 cup granulated white sugar
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 0.5 tsp ground cinnamon
  • 0.5 cup semi-sweet chocolate chips (optional)
  • 0.5 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with a parchment paper sling for easy removal.
  2. In a large mixing bowl, mash the overripe bananas until mostly smooth with only a few small lumps remaining.
  3. Whisk the melted butter into the mashed bananas. Add the brown sugar and granulated white sugar, whisking until the mixture looks glossy and cohesive.
  4. Whisk in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the sour cream and vanilla extract to complete the emulsion.
  5. Gently fold in the flour, baking soda, salt, and cinnamon using a spatula until just combined. If using chocolate chips or nuts, fold them in now. Do not overmix.
  6. Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
