Ingredients:

  • 4 (6 oz / 170g) cod fillets or loins
  • 1/2 cup (65g) all-purpose flour
  • 1 tsp (6g) kosher salt
  • 1/2 tsp (1g) black pepper
  • 1/2 tsp (1g) smoked paprika
  • 2 tbsp (30ml) neutral oil
  • 3 tbsp (42g) unsalted butter
  • 3 cloves (9g) garlic, smashed
  • 1 tbsp (15ml) fresh lemon juice

Instructions:

  1. Use paper towels to pat every side of the cod fillets until bone-dry.
  2. Mix the flour, salt, pepper, and paprika in a shallow bowl. Lightly dredge the fillets, shaking off all excess flour so only a thin veil remains.
  3. Place a skillet over medium-high heat and add the neutral oil. Heat until the oil begins to shimmer or barely smoke.
  4. Carefully lay the fillets in the pan. Press down gently for 5 seconds to ensure full surface contact.
  5. Cook undisturbed for 3-4 minutes until a golden-brown crust forms and the fish naturally releases from the pan.
  6. Carefully flip the fillets.
  7. Immediately add the butter and smashed garlic to the pan. As the butter foams, tilt the pan and spoon the hot garlic butter over the fish for 2-3 minutes.
  8. Remove from heat and drizzle with fresh lemon juice.
