Ingredients:
- 4 (6 oz / 170g) cod fillets or loins
- 1/2 cup (65g) all-purpose flour
- 1 tsp (6g) kosher salt
- 1/2 tsp (1g) black pepper
- 1/2 tsp (1g) smoked paprika
- 2 tbsp (30ml) neutral oil
- 3 tbsp (42g) unsalted butter
- 3 cloves (9g) garlic, smashed
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Use paper towels to pat every side of the cod fillets until bone-dry.
- Mix the flour, salt, pepper, and paprika in a shallow bowl. Lightly dredge the fillets, shaking off all excess flour so only a thin veil remains.
- Place a skillet over medium-high heat and add the neutral oil. Heat until the oil begins to shimmer or barely smoke.
- Carefully lay the fillets in the pan. Press down gently for 5 seconds to ensure full surface contact.
- Cook undisturbed for 3-4 minutes until a golden-brown crust forms and the fish naturally releases from the pan.
- Carefully flip the fillets.
- Immediately add the butter and smashed garlic to the pan. As the butter foams, tilt the pan and spoon the hot garlic butter over the fish for 2-3 minutes.
- Remove from heat and drizzle with fresh lemon juice.
