Ingredients:
- 4 (6 oz / 170g) cod fillets
- 2 tbsp (30ml) neutral oil
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) black pepper
- 2 tbsp (16g) all-purpose flour
- 4 tbsp (56g) unsalted butter
- 4 cloves (20g) garlic, minced
- 1 tbsp (15ml) fresh lemon juice
- 1 tbsp (4g) fresh parsley, chopped
Instructions:
- Pat the cod fillets bone-dry with paper towels on all sides. Season generously with salt and pepper, then lightly dust with all-purpose flour, shaking off any excess.
- Heat the neutral oil in a large non-stick skillet over medium-high heat until it shimmers.
- Carefully lay the fillets in the pan. Sear undisturbed for 3-4 minutes until a golden-brown edge forms on the sides.
- Flip the fillets and reduce the heat to medium.
- Add the unsalted butter and minced garlic to the skillet. Once the butter foams, tilt the pan and continuously spoon the bubbling garlic butter over the fish for 2-3 minutes.
- Turn off the heat. Stir in the fresh lemon juice and chopped parsley into the pan juices.
- Spoon the remaining garlic butter sauce over the fillets and serve immediately.
