Ingredients:

  • 4 (6 oz / 170g) cod fillets
  • 2 tbsp (30ml) neutral oil
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) black pepper
  • 2 tbsp (16g) all-purpose flour
  • 4 tbsp (56g) unsalted butter
  • 4 cloves (20g) garlic, minced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (4g) fresh parsley, chopped

Instructions:

  1. Pat the cod fillets bone-dry with paper towels on all sides. Season generously with salt and pepper, then lightly dust with all-purpose flour, shaking off any excess.
  2. Heat the neutral oil in a large non-stick skillet over medium-high heat until it shimmers.
  3. Carefully lay the fillets in the pan. Sear undisturbed for 3-4 minutes until a golden-brown edge forms on the sides.
  4. Flip the fillets and reduce the heat to medium.
  5. Add the unsalted butter and minced garlic to the skillet. Once the butter foams, tilt the pan and continuously spoon the bubbling garlic butter over the fish for 2-3 minutes.
  6. Turn off the heat. Stir in the fresh lemon juice and chopped parsley into the pan juices.
  7. Spoon the remaining garlic butter sauce over the fillets and serve immediately.
