Ingredients:

  • 4 (6 oz / 170g) cod fillets, patted dry
  • 1/4 cup (30g) all-purpose flour
  • 1 tsp (6g) kosher salt
  • 1/2 tsp (1g) black pepper
  • 2 tbsp (30ml) neutral oil
  • 3 tbsp (42g) unsalted butter
  • 3 cloves (9g) garlic, minced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (4g) fresh parsley, chopped
  • 1 pinch (0.5g) salt

Instructions:

  1. Pat the cod fillets extremely dry with paper towels. In a shallow dish, combine the flour, salt, and pepper. Lightly dredge each fillet in the mixture, shaking off any excess.
  2. Heat the neutral oil in a stainless steel or cast iron skillet over medium-high heat until it shimmers. Place fillets in the pan, press down lightly for 5 seconds, and sear undisturbed for 3–4 minutes until a deep golden-brown crust forms.
  3. Flip the fillets gently and cook for another 3 minutes, or until the fish is opaque and flakes easily.
  4. Reduce heat to medium. Add the butter and minced garlic to the pan. Once the butter foams, spoon the garlic butter over the fillets continuously for 1 minute.
  5. Stir in the lemon juice and chopped parsley immediately before removing from heat.
