Ingredients:

  • 2 cups (300g) frozen strawberries
  • 1/2 cup (120ml) plain Greek yogurt
  • 1 tbsp (21g) honey
  • 1/4 cup (60ml) unsweetened almond milk
  • 2 frozen bananas (225g)
  • 1/2 cup (120ml) vanilla Greek yogurt
  • 1/4 cup (60ml) coconut milk
  • 1/2 tsp (2.5ml) vanilla extract
  • 1 1/2 cups (225g) frozen blueberries
  • 1/2 cup (120ml) plain Greek yogurt
  • 2 tbsp (30ml) lemon juice
  • 1/4 cup (60ml) unsweetened almond milk

Instructions:

  1. Gather all frozen ingredients and chill four clear tall glasses or mason jars in the freezer for 5 minutes.
  2. Prepare the Red Layer: Combine frozen strawberries, plain Greek yogurt, honey, and unsweetened almond milk in a blender. Blend until velvety and thick; transfer to a container.
  3. Prepare the White Layer: Blend frozen bananas, vanilla Greek yogurt, coconut milk, and vanilla extract until smooth and opaque with no frozen lumps.
  4. Prepare the Blue Layer: Blend frozen blueberries, plain Greek yogurt, lemon juice, and unsweetened almond milk until the color is a deep, vibrant indigo.
  5. Pour the Red Layer: Fill the bottom third of each chilled glass with the red mixture and smooth the top with a spoon.
  6. Pour the White Layer: Gently pour the white mixture over the back of a spoon held just above the red layer to prevent mixing.
  7. Pour the Blue Layer: Repeat the spoon technique with the blue mixture, filling each glass to the brim.
