Ingredients:
- 225g ripe bananas (approx. 1 cup mashed)
- 125g creamy peanut butter (approx. 1/2 cup)
- 180g quick oats (approx. 1.5 cups)
- 1 tsp baking powder
- 60g dark chocolate chips (approx. 1/3 cup)
- 1 pinch flaky sea salt
Instructions:
- In a large mixing bowl, mash the bananas until they reach a liquid consistency with very few lumps.
- Whisk in the peanut butter vigorously until the mixture is a singular, tan-colored paste and the oils are completely integrated.
- Add the oats and baking powder to the wet mixture. Use a spatula to fold the ingredients together until no dry pockets remain.
- Gently fold in the dark chocolate chips until evenly distributed throughout the dough.
- Using a medium cookie scoop (1.5 tbsp capacity), portion the dough onto a baking sheet lined with parchment paper.
- Sprinkle each cookie with a small pinch of flaky sea salt and bake for 12 minutes until set.
