Ingredients:

  • 1 package (16 oz / 450g) Phyllo dough, thawed
  • 3/4 cup (170g) Unsalted butter, melted
  • 1 can (14 oz / 397g) Sweetened condensed milk
  • 3 large (150g) Eggs, room temperature
  • 1 cup (240ml) Whole milk
  • 1 tsp (5ml) Pure vanilla extract
  • 1/4 tsp (1.5g) Salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan. Note: Use butter or non stick spray to prevent the bottom from sticking.
  2. Gently scrunch and fold sheets of phyllo dough into the pan to create random ridges and folds.
  3. Brush each layer lightly with melted butter until the pan is filled. Note: Don't flatten the dough; keep those peaks high.
  4. In a large mixing bowl, whisk the eggs and sweetened condensed milk together until smooth.
  5. Slowly stream in the whole milk, vanilla extract, and salt.
  6. Whisk constantly until the mixture is a pale, uniform cream.
  7. Carefully pour the custard mixture over the crinkled phyllo dough.
  8. Allow the liquid to seep into the valleys for about 1 minute before baking.
  9. Bake for 35-40 minutes until the exposed phyllo edges are deep golden brown and the custard is set with a slight jiggle.
