Ingredients:
- 1.5 cups (240g) fine or medium-ground yellow cornmeal
- 1 cup (125g) all-purpose flour
- 1.5 tablespoons (20g) double-acting baking powder
- 1 teaspoon (6g) fine sea salt
Instructions:
- Place a fine-mesh sieve over a large mixing bowl. Pour in the all-purpose flour, baking powder, and fine sea salt. Sift these ingredients together twice to remove lumps and introduce air into the mixture.
- Add the yellow cornmeal to the sifted flour mixture. Use a balloon whisk to stir the ingredients in a circular motion for at least 60 seconds until the color is completely uniform and the leaveners are perfectly distributed.
- Transfer the finished mix into a clean, dry airtight container. Label the jar with the date and store in a cool, dark place to maintain the potency of the baking powder.
