Ingredients:

  • 1 cup (125g) all-purpose flour
  • 1.5 tablespoons (20g) double-acting baking powder
  • 1 teaspoon (6g) fine sea salt

Instructions:

  1. Place a fine-mesh sieve over a large mixing bowl. Pour in the all-purpose flour, baking powder, and fine sea salt. Sift these ingredients together twice to remove lumps and introduce air into the mixture.
  2. Add the yellow cornmeal to the sifted flour mixture. Use a balloon whisk to stir the ingredients in a circular motion for at least 60 seconds until the color is completely uniform and the leaveners are perfectly distributed.
  3. Transfer the finished mix into a clean, dry airtight container. Label the jar with the date and store in a cool, dark place to maintain the potency of the baking powder.
