Ingredients:

  • 1.5 lbs cod fillets
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly brush with olive oil.
  2. Pat the cod fillets completely dry with paper towels. Arrange fillets on the sheet and season both sides evenly with salt and black pepper.
  3. In a small bowl, combine melted butter, minced garlic, lemon juice, and lemon zest.
  4. Using a brush or spoon, generously coat the top of each fillet with the butter mixture, ensuring garlic is evenly distributed.
  5. Place the baking sheet in the center rack of the oven and bake for 12–15 minutes until the flesh is opaque and flakes easily with a fork.
  6. Remove from the oven and immediately garnish with fresh chopped parsley.
