Ingredients:
- 1.5 lbs cod fillets
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly brush with olive oil.
- Pat the cod fillets completely dry with paper towels. Arrange fillets on the sheet and season both sides evenly with salt and black pepper.
- In a small bowl, combine melted butter, minced garlic, lemon juice, and lemon zest.
- Using a brush or spoon, generously coat the top of each fillet with the butter mixture, ensuring garlic is evenly distributed.
- Place the baking sheet in the center rack of the oven and bake for 12–15 minutes until the flesh is opaque and flakes easily with a fork.
- Remove from the oven and immediately garnish with fresh chopped parsley.
