Ingredients:
- 2 lbs (900g) sweet potatoes, peeled and diced into ½-inch cubes
- 2 tbsp (30ml) extra virgin olive oil
- 1 tsp (2g) smoked paprika
- 1 tsp (2g) garlic powder
- ½ tsp (1g) ground cumin
- ½ tsp (3g) sea salt
- ¼ tsp (1g) black pepper
- 1 can (15 oz / 425g) black beans, drained and rinsed
- 1 medium (150g) ripe avocado
- ¼ cup (60ml) plain Greek yogurt
- 1 tbsp (15ml) fresh lime juice
- 1 small clove (3g) garlic, minced
- 2 tbsp (30ml) water
- Pinch (0.5g) of salt
- 8 small (6-inch) corn tortillas
- 2 cups (100g) shredded red cabbage
- ¼ cup (15g) fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions:
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a large rimmed baking sheet, ensuring they are not crowded.
- Roast for 20–25 minutes, flipping halfway through, until edges are mahogany-colored and centers are tender.
- During the last 5 minutes of roasting, toss the rinsed black beans onto the baking sheet with the potatoes and stir to heat through.
- Remove the pan from the oven and squeeze half a lime over the hot mixture.
- Combine avocado, Greek yogurt, lime juice, garlic, and salt in a blender and pulse until smooth.
- Slowly add water one tablespoon at a time until the crema is pourable but thick.
- Warm corn tortillas in a skillet over medium heat for 30 seconds per side until pliable.
- Fill each tortilla with the roasted sweet potato and bean mixture, top with shredded red cabbage, drizzle with avocado crema, and garnish with fresh cilantro.
