Ingredients:
- 2 lbs (900g) sweet potatoes, peeled and cubed
- 1/2 cup (60g) cornstarch
- 1 tbsp (15g) ghee
- 1 tsp (5g) cumin seeds
- 1 tsp (2g) red chili powder
- 1 tsp (3g) garam masala
- 1 tsp (4g) amchur
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 3 tbsp (45ml) oil
- 2 tbsp (8g) fresh cilantro, finely chopped
- 1 tbsp (15g) green chilies, finely chopped
Instructions:
- Boil the cubed sweet potatoes in salted water until tender but not mushy, approximately 12-15 minutes.
- Drain the potatoes completely and let them steam-dry in the colander for 5 minutes to remove excess moisture.
- Mash the potatoes in a bowl until velvety smooth, ensuring no large lumps remain.
- Heat ghee in a small pan over medium heat; add cumin seeds and fry until they pop, then stir this mixture into the mashed potatoes.
- Fold in the red chili powder, garam masala, amchur, salt, and black pepper.
- Stir in the finely chopped cilantro and green chilies.
- Gradually add the cornstarch, mixing until the dough is pliable and does not stick to your fingers.
- Shape the mixture into small, flat discs about 1 inch thick.
- Heat oil in a skillet over medium heat until it shimmers.
- Carefully place the patties in the pan and fry for 4-5 minutes per side without moving them, until they develop a deep mahogany-colored crust.
- Remove and drain on a paper towel to maintain crispness.
