Ingredients:
- 1 lb lean ground turkey
- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 3 cloves garlic, minced
- 3 cups fresh baby spinach, packed
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1 tsp fine sea salt
- 1/2 tsp cracked black pepper
Instructions:
- Dice the sweet potatoes and onions into uniform pieces to ensure even cooking.
- Heat 1 tbsp of oil over medium-high heat in a 12-inch skillet. Add ground turkey, breaking it apart with a spatula, and cook until mahogany-colored and no longer pink. Remove turkey from pan and set aside.
- Add the remaining 1 tbsp of oil to the skillet. Add diced sweet potatoes and cook undisturbed for 3-4 minutes to sear, then stir frequently for another 8-10 minutes until tender.
- Stir in the diced onions and minced garlic during the last 3 minutes of cooking the sweet potatoes.
- Return the cooked turkey to the pan. Sprinkle with smoked paprika, oregano, garlic powder, salt, and pepper. Toss for 2 minutes to toast the spices.
- Fold in the baby spinach and stir until the leaves wilt from the residual heat.
