Ingredients:

  • 1.5 lb Cod fillets
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 2 tbsp unsalted butter, melted
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh lemon zest
  • 1 tbsp lemon pepper seasoning
  • 1 tsp garlic powder
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper and lightly brush with olive oil.
  2. Pat the cod fillets completely dry with paper towels to ensure seasoning adheres.
  3. In a small bowl, whisk together melted butter, lemon juice, lemon zest, lemon pepper seasoning, and garlic powder until a cohesive emulsion forms.
  4. Arrange the fillets on the prepared baking sheet and season both sides lightly with salt and pepper.
  5. Using a pastry brush or spoon, generously coat the top of each fillet with the lemon pepper glaze.
  6. Bake in the center rack for 10–12 minutes, or until the internal temperature reaches 145°F (63°C) and the flesh flakes easily with a fork.
  7. Remove from the oven, let rest for 2 minutes, and garnish with chopped fresh parsley.
