Ingredients:
- 1.5 lb Cod fillets
- 1 tbsp olive oil
- 1/2 tsp sea salt
- 1/2 tsp cracked black pepper
- 2 tbsp unsalted butter, melted
- 2 tbsp fresh lemon juice
- 1 tbsp fresh lemon zest
- 1 tbsp lemon pepper seasoning
- 1 tsp garlic powder
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper and lightly brush with olive oil.
- Pat the cod fillets completely dry with paper towels to ensure seasoning adheres.
- In a small bowl, whisk together melted butter, lemon juice, lemon zest, lemon pepper seasoning, and garlic powder until a cohesive emulsion forms.
- Arrange the fillets on the prepared baking sheet and season both sides lightly with salt and pepper.
- Using a pastry brush or spoon, generously coat the top of each fillet with the lemon pepper glaze.
- Bake in the center rack for 10–12 minutes, or until the internal temperature reaches 145°F (63°C) and the flesh flakes easily with a fork.
- Remove from the oven, let rest for 2 minutes, and garnish with chopped fresh parsley.
