Ingredients:
- 1 package (450g) Phyllo Dough, thawed
- 1/2 cup (115g) Unsalted Butter, melted
- 1 cup (250g) Ricotta Cheese, drained
- 1 cup (115g) Shredded Mozzarella Cheese
- 1/2 cup (60g) Crumbled Feta Cheese
- 1 egg (50g), lightly beaten
- 1 tsp (5g) Dried Oregano
- 1/2 tsp (3g) Garlic Powder
- 2 cups (300g) Cherry Tomatoes, halved
- 1/2 tsp (3g) Sea Salt
- 1/4 tsp (1g) Black Pepper
- 1 tsp (5ml) Lemon Zest
Instructions:
- Preheat your oven to 375°F (190°C) and line a large rimmed baking sheet with parchment paper.
- Lay one sheet of phyllo dough over the parchment, brushing the entire surface generously with melted butter. Repeat this process until all sheets are stacked, brushing butter between every layer.
- Fold about 1 inch (2.5cm) of the edges of the phyllo dough inward to create a raised rim.
- In a mixing bowl, combine the ricotta, mozzarella, beaten egg, oregano, and garlic powder. Stir until velvety and cohesive.
- Spread the cheese mixture evenly inside the phyllo rim, leaving a small border of pastry exposed.
- Sprinkle the crumbled feta evenly across the top of the ricotta layer.
- Press the halved cherry tomatoes cut-side up into the cheese mixture.
- Sprinkle the salt, pepper, and lemon zest over the top of the tomatoes.
- Bake for 25–30 minutes, or until the pastry edges are a deep mahogany brown.
