Ingredients
  

Crispy Sweet Potato Tikki

  • 2 cup mashed sweet potatoes
  • ½ cup chickpea flour (besan)
  • 1 chopped green chili
  • 1 tsp cumin
  • ½ tsp chaat masala
  • Salt to taste

Sweet Potato Chaat

  • 2 boiled sweet potatoes (cubed)
  • Handful of sev
  • 1 tsp chaat masala
  • ½ tsp red chili powder
  • Lemon juice
  • Fresh cilantro & pomegranate seeds (optional)

Sweet Potato & Spinach Curry

  • 1 cup diced sweet potatoes
  • 1 bunch spinach (palak)
  • ½ cup coconut milk
  • 1 onion
  • 2 garlic cloves
  • 1 inch ginger
  • 1 tsp turmeric
  • ½ tsp coriander
  • ¼ tsp garam masala

Sweet Potato Paratha

  • 1 cup mashed sweet potatoes
  • 1.5 cup whole wheat flour
  • ½ tsp cumin seeds
  • ½ tsp cumin seeds
  • ½ tsp ajwain (carom seeds)
  • ½ tsp salt
  • ½ tsp red chili powder
  • Ghee or oil for cooking

Gur Shakarkandi (Jaggery-Glazed Sweet Potatoes)

  • 2 sweet potatoes (sliced thin)
  • ½ cup jaggery (gur)
  • 2 tbsp ghee
  • 3 cardamom pods

Instructions
 

Crispy Sweet Potato Tikki

  • Mash sweet potatoes and mix with chickpea flour, chili, and spices.
  • Shape into small patties and pan-fry in 1 tbsp oil until golden brown.
  • Let the mix chill for 20 minutes before frying to prevent crumbling.

Sweet Potato Chaat

  • Toss cubed sweet potatoes with chaat masala, red chili powder, and lemon juice.
  • Garnish with sev, cilantro, and pomegranate seeds.
  • Optional: Add tamarind chutney for extra flavor.

Sweet Potato & Spinach Curry

  • Sauté onions, ginger, and garlic in a pan.
  • Add turmeric, coriander, garam masala, and sweet potatoes.
  • Pour in 1 cup water and simmer for 15 minutes.
  • Stir in spinach and coconut milk, then cook for 5 more minutes.

Sweet Potato Paratha

  • Mix mashed sweet potatoes with whole wheat flour, spices, and a little water if needed.
  • Knead into a soft dough and let it rest for 10 minutes.
  • Roll into flat circles and cook on a heated tawa, brushing with ghee until golden brown.

Gur Shakarkandi (Jaggery-Glazed Sweet Potatoes)

  • Melt ghee in a pan and fry sweet potato slices until soft.
  • Add crushed jaggery and cardamom pods. Stir until caramelized and sticky.

Notes

  • You can swap orange sweet potatoes for white ones, but they will be slightly sweeter.
  • Baking is a healthier alternative to frying—just bake at 400°F for 20 minutes.
