Equipment

  • 1 Baking Sheet
  • 1 Mixing Bowl
  • 1 Measuring Cups and Spoons
  • 1 Oven

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup desiccated coconut
  • 1/4 cup sugar
  • 1/4 cup butter (softened) or vegan butter (for a vegan version)
  • 1/4 cup unsweetened applesauce (as an egg substitute)
  • 1/2 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  • Preheat your oven to 180°C (350°F).
  • In a mixing bowl, combine the flour, sugar, baking powder, and desiccated coconut.
  • Add softened butter (or vegan butter), applesauce, and vanilla extract to the dry ingredients, and mix until a dough forms.
  • Shape the dough into small biscuits and place them on a baking sheet lined with parchment paper.
  • Bake for 15–20 minutes, or until golden brown.
  • Allow to cool, then enjoy your egg-free, vegetarian coconut biscuits!

Notes

  • To make these biscuits dairy-free, simply substitute the butter with vegan butter or coconut oil.
  • Unsweetened applesauce works as a perfect egg substitute, providing moisture and a slight sweetness without compromising the texture.
  • These biscuits are great for breakfast or as a snack with your favorite tea or coffee.
  • Feel free to add some chopped nuts, like almonds or cashews, for an extra crunch and flavor.
  • For a sweeter version, you can add a little more sugar or drizzle with a light glaze after baking.
  • Store leftovers in an airtight container for up to 3 days to keep them fresh.
